Institutional cook cover letter example

Collective catering employers look for a cook who respects procedures, delivers on time and cares about the people eating. Your letter should mention the scale of production you have handled, your hygiene practice and your experience with diets.

If you come from restaurants, explain why you want regular hours and how your skills transfer.

Subject: Application for the Cuisinier de collectivité position at [Establishment]

Dear [Hiring Manager Name],

I am writing about the cook position at [Establishment]. For [x] years I have cooked at the central kitchen of [Current Employer] in [City], which delivers cook-chill meals to [x] school canteens.

My day starts with checking the deliveries, then I lead production: braised meats in the tilting pan, vegetables in the combi oven, sauces and desserts in large batches. I make sure each dish is chilled within the required time, packed, labelled and recorded. Our last health inspection found no non-compliance in my area.

Working with the dietitian, I adapted several recipes for the weekly vegetarian menu, testing them with a few schools before generalising them. I also prepare meals without allergens for children with an individual protocol, in a separate area.

Your care home appeals to me because I would like to cook for people I can see at mealtimes and adapt dishes to their tastes. I have already prepared minced and puréed meals and know how important presentation is for residents who eat little.

I would be glad to visit your kitchen and talk about how your production is organised.

Kind regards,[First Name Last Name][Phone number]

Frequently asked questions

Should I write to the kitchen manager or HR?

In catering companies, address the site manager or the regional manager if you know their names. In public bodies, write to the head of the institution or the mayor through HR, following the instructions in the job offer.

Can I apply to a public body without passing an exam?

Yes. Many cooks are hired on contracts by town halls, hospitals and schools. Some later pass the exam to become civil servants. Say in your letter that you are open to a contract position.

How do I explain leaving restaurants for a canteen?

Be direct: daytime hours, weekends off, a stable team, the wish to cook for a specific public. These are common and accepted reasons. Add what you bring: speed, technique, care for taste.
