Baker cover letter example

Bakery owners read applications quickly and often hire after a trial night. Your letter should say what you can produce, which hours you can work and why their bakery interests you.

A precise sentence about your levain or your baguette says more than a paragraph about passion.

Subject: Application for Baker position, night production

Dear [Owner's name],

I am applying for the baker position at [Bakery name]. I have bought your bread several times and noticed that you work with stone-ground flour from a local mill and long fermentation. This is the type of bakery I want to work in.

I earned my CAP Boulanger as an apprentice at [Bakery], then worked there for [x] years. For the last year I ran night production on my own four days a week: baguettes de tradition, levain loaves, rye bread and the croissants and pains au chocolat for the morning. I maintain the starter, adjust hydration and water temperature with the seasons, and plan batches so the first shelves are full at opening. I also introduced a buckwheat and walnut loaf that became a weekend regular.

I am used to night and weekend work and I follow HACCP procedures carefully, including temperature and cleaning records. I trained our apprentice in shaping last year, which I enjoyed.

I would be glad to come for a trial night whenever it suits you.

Kind regards,[First Name Last Name][Phone] | [Email]

What to highlight

  • Your qualification and the bakery where you trained
  • The products you can make on your own
  • Your availability for night and weekend work
  • Something specific about their bakery (flour, methods, products)
  • Your willingness to do a trial shift

Mistakes to avoid

  • Not saying whether you accept night work.
  • Writing a generic letter that could be sent to a supermarket bakery or an artisan shop alike.
  • Overstating autonomy you do not have: a trial night will show it.
  • Forgetting your phone number, since many owners call rather than email.

Frequently asked questions

Do French bakeries expect a cover letter?

Many small bakeries hire after a phone call and a trial shift, and some never read a letter. A short one is still useful when you apply by email or through a job board, because it explains your products and availability before the owner calls you.

How do I mention a foreign baking qualification?

Give the name of the qualification and a plain explanation of what it covered, for example a two-year bakery programme including sourdough and viennoiserie. Then add what you can produce. A trial night will matter more than the title, but a clear description reassures the owner.

Should I ask about the baking schedule in my letter?

No. Keep questions about hours, days off and pay for the interview or the trial. In the letter, simply state which schedules you accept, for example nights, early mornings or weekends, so the owner knows you understand the job.
